Delicate dishes need wines that can accompany them without overwhelming them. Intense dishes need wines with enough structure not to disappear after the first bite.<\/p>\n<p>Everything in life needs balance.<\/p>\n<p>&nbsp;<\/p>\n<h2>Fat calls out for freshness<\/h2>\n<p>&nbsp;<\/p>\n<p>Fat has a wonderful quality: it carries flavour. But it also has a less poetic one: it can saturate the palate. That is why rich dishes often benefit from wines with good acidity, tannins or even some effervescence.<\/p>\n<p>Think of a mature cheese, cured meat or meat with an unctuous sauce. Fresh cheeses usually appreciate wines that are also fresh and high in acidity. Aged cheeses allow wines with more body and complexity. And blue cheeses present one of the table\u2019s most interesting contrasts: their saltiness and power work especially well with sweet wines.<\/p>\n<p>It may seem contradictory, but that is precisely why it works. Not as commandments, but as a compass.<\/p>\n<h3>Look for similar intensity<\/h3>\n<p>A delicate dish usually appreciates a delicate wine, while a powerful dish needs a wine capable of standing its ground.<\/p>\n<h3>Use acidity to refresh<\/h3>\n<p>Wines with good acidity work especially well with rich dishes, fried foods, sauces and foods that need the palate cleansed.<\/p>\n<h3>Be careful with tannin<\/h3>\n<p>Tannins work wonderfully with protein and fat, but can become complicated with certain fish, bitter dishes or very spicy preparations.<\/p>\n<h3>Think about the sauce first<\/h3>\n<p>Very often the real star of a pairing is not the protein, but what accompanies it. A sauce can transform a dish completely and determine which bottle to open.<\/p>\n<h3>Do not forget where it comes from<\/h3>\n<p>Some combinations have worked for generations for a reason. Wines and products from the same area often share culinary culture, climate and tradition.
